Potato Chip Chicken (because some days, I don’t feel like eating a salad)
- Organic Chicken
- Organic Kettle Chips
- EVOO
- Salt and Pepper
- Preheat oven to 400
- Cube chicken
- Crush potato chips in a plastic baggie with rolling pin, put on paper plate
- Add salt and pepper to liking (you can add cayenne too if you want it spicy)
- Press chicken into chip mix until coated (no coating, the chips just stick)
- Add a light layer of EVOO to oven safe pan, put in chicken
- Bake for 10mins on each side
- If you want it more done - broil until cooked and crispy
*This is NOT a health food. Yes, it looks greasy because it is. Delicious too!*

Waking Ashland - I Am For You
Several years ago when Waking Ashland still existed, they came through Tampa and played a show at what is now the old Orpheum. You, Owen, will learn all about this place when you get older as this was the place where your mom and dad went to their first concert together. Mom had previously turned me down on a Bright Eyes show in Orlando but that story is for another song, another day.
We convinced our good friend (your uncle) Keith to come along and we all left the show very impressed. They were always a fantastic band live. We grabbed food at Fresh Mouth and Jonathan and a few of the other band members walked in and ate at the counter. One thing I have always done is things for touring band that we respect as they have a tough go of it. I asked our waitress to grab their check along with ours and paid for their food. They went to pay and were told around the same time we were leaving and thanked us a few times for doing it. It wasn’t the first and won’t be the last time we do something similar as bands like these guys deserve it.
I Am For You was the song that introduced me to the piano rock that was Waking Ashland. It was a catchy song and I’m glad I took the plunge with the album. I will have a number of albums for Owen to listen to as a whole and this will be one of them. It is a beautiful record and one that I hope is enjoyed as much as we have enjoyed it.
